Absolutely delicious! Made by owner and chef John Hathaway, the Whiptail Grill fare is made fresh-to-serve in the intimacy of this re-invented service station just out the beautiful Zion Canyon in Utah. Don't miss this cozy food stop and it's hip-aire as you pass through Springdale. John makes enchilada's with style... a unique creative sensitivity to food blending with a salute to South West traditions. For example... on a large platter arrives two corn tortillas stuffed with spaghetti squash and goat cheese with a smothering of melted cheese and green chili sauce. A tasty, fresh mixed-green salad comes served on the side with cumin-rich warm black beans to balance and finish the meal and presentation. What a treat after a day of hiking in the hot sun! For those who love meat, there is the delicious meat enchilada with beans and salad as well. (Be sure to try the chipotle dressing and the large selection of original beers!) Whether you wish to read a book and dine alone or hang out on the patio with friends, be sure not to miss this culinary delight!
